DIRECTIONS


In a large bowl, combine the tuna, celery, onion, mayonnaise, lemon juice, parsley, garlic powder, salt and pepper. Mix well and refrigerate until chilled. Sprinkle with paprika if desired.

Asian Spicy Tuna Salad





1 (6 ounce) can solid white tuna packed in water, drained


1 teaspoon grated fresh ginger root


1/2 teaspoon diced green chile pepper


3 tablespoons finely chopped onion


1/4 teaspoon curry powder (optional)


1/4 cup mayonnaise


1/2 teaspoon fresh lemon juice





With a fork, flake tuna into a small bowl. Mix in ginger, pepper, chopped onion, curry powder, mayonnaise, and lemon juice.

Dressed-Up Tuna Salad





1 head romaine lettuce, torn


1 pint cherry tomatoes, halved


4 hard-cooked eggs, cut into wedges


4 ounces Swiss cheese, julienned


2 (6 ounce) cans light water-packed tuna

1/2 cup olive or vegetable oil


3 tablespoons balsamic or red wine vinegar


1 teaspoon dried oregano

2 pounds very fresh tuna steak, cut 1-inch thick

Directions


Brush the tuna steaks with olive oil, and sprinkle with salt and pepper. Place the tuna steaks in a very hot saute pan and cook for only 1 minute on each side. Set aside on a platter.





Meanwhile, in a small bowl, combine the olive oil, salt, pepper, lime zest, wasabi, lime juice, soy sauce and hot sauce. Add the avocados to the vinaigrette.





Cut the tuna in chunks and place it in a large bowl. Add the scallions and red onion and mix well. Pour the vinaigrette mixture over the tuna and carefully mix.

Tuna Pasta Pesto Salad!





Boil (however many servings you wish to make) some shell pasta and cool.





Mix the pasta with:


store bought pesto sauce (where they keep the refrigerated pasta and mozarella cheese) - make sure a little olive oil makes it in!

7 oz. albacore Tuna in water


1/2 c Diced tomatoes with basil, oregano, %26amp; garlic

    4 Tbls. Butter


    4 Tbls. Flour


    1 tsp. Salt

    1 C Frozen green peas





    Melt butter of very low heat. Add flour, salt %26amp; pepper; stir until well blended. Remove from heat.





    Gradually stir in milk and return to heat. Cook, stirring constantly until thick and smooth.

    MEXICAN CASSEROLE





    1 16 oz container sour cream


    1 8 oz pkg cream cheese


    2 eggs


    2 cans cream of chicken soup


    1 large onion, chopped


    1 small can olives, chopped


    1 small can chopped green chiles


    1 cup cooked chicken, tuna, or turkey, chopped


    1 8 oz pkg Monterey Jack or Cheddar cheese, shredded








    Mix together sour cream, cream cheese, eggs, cream of chicken soup, chopped onion, olives (optional), green chillies, chicken, tuna or turkey (add more than called for if desired).


    Spread mixture evenly in a 9x13 pan glass or earthenware casserole dish.





    Top with shredded cheese.





    Cover and bake 1 hour 350 degrees. Can be frozen and cooked later or cooked and reheated.





    A metal 9x13 pan takes longer to cook than a glass one, so bake it slightly longer if you use a metal pan.





    Mixture should be set well when removed from oven.








    EGGPLANT SUPPER





    1 med. to lg. eggplant


    1 lg. can crushed tomatoes


    2 cans tuna in water


    1 can chick peas


    1/2 c. green olives, pitted with pimientos


    1 lg. clove garlic, minced


    1 tbsp. oregano


    1/2 c. white wine





    1. Peel and cut eggplant into small pieces.


    2. Put tomatoes, eggplant, garlic and oregano into large saucepot to simmer (cover).





    3. Drain tuna, drain olives and drain and rinse chick peas.





    4. After 15 minutes, add other ingredients to eggplant mixture, along with white wine. Simmer until eggplant is tender continue 10 minutes.





    This is great as main dish with bread and salad. It also works well over pasta.

    3 cups white sauce (thick)

    Ingredients:





    1/2 can of tuna in water. Drain it well.


    Two tablespoons of chopped celeries


    Three slices of tomatoes


    One pita bread (6 inches).


    3 slices of cucumber


    One teaspoon of apple cider vinegar


    Two tablespoon of fat free Italian dressing


    One green lettuce leaf (chop it well)

    Salt, pepper and ketchup according to your preferences





    Instructions:


    Blend the tuna, bell peppers, dressing, apple vinegar and celeries in a bowl. Refrigerate overnight and keep the cucumber, lettuce and tomatoes separated from the tuna mix.





    When serving just wrap the tuna mix in pita bread securely while inserting the lettuce, cucumber and tomatoes as well. You can add salt, pepper and ketchup to enhance the taste. This makes one serving.

    Tuna cakes (croquettes)


    1 can tuna


    1/1 tuna can of fresh breadcrumbs


    2 t. finely chopped onion


    2 t. finely chopped celery


    1 t. mayo


    1 egg, beaten


    Dash Salt and Pepper


    Dash hot pepper sauce (optional)





    1 C. dry bread crumbs or cracker crumbs


    Enough vegetable oil to coat bottom of large skillet





    Mix first ingredients gently, form into small patties, dip in bread or cracker crumbs to coat........let sit 5-10 min. so crumbs adhere. Fry in vegetable oil 3-4 min until nicely browned, turn carefully (they are very fragile and break easily, so make small patties) fry on other side additional 2-3 min until golden brown. (You can bake these, too, at 325 for about 20 min)

    2 c. cooked macaroni


    1 can water packed tuna, drained


    1/2 c. chopped onion

    1 tbsp. salad oil


    Salt and pepper to taste





    DRESSING:





    1/4 c. low-fat mayonnaise

    Mix cooked macaroni with vinegar and oil; chill in refrigerator while preparing other ingredients. Add the tuna, chopped vegetables, and seasonings. Mix well. Keep chilled. Before serving, add the mayonnaise and yogurt. Serve in lettuce lined bowl.


    Variation: Omit the green pepper and cucumber; add chopped apple and pineapple chunks and halved green grapes or other fruit combinations.     Good and tuna macaroni salad...that's an oxymoron right!
    I don't have a recipe, but I drain the macaroni over some chopped onion to soften it, but not cook it. Then I put frozen peas in with the drained mac to partially thaw them and cool the mac. When the mac is cool, add some mayo and a can of albacore tuna and you're done. (Mayo can be deadly if allowed to get warm)
    PASTA TUNA SALAD





    1 head broccoli


    1 c. bacon


    1 c. Cheddar cheese


    1/2 sm. onion, chopped


    8 oz. pkg. pasta (spiral)


    Frozen peas (sm. box)


    Carrots (two)


    1 can tuna (sm.)





    DRESSING:





    1 1/2 c. Miracle Whip


    3/4 c. sugar


    3 tbsp. vinegar

    Cut broccoli into small pieces. Cook and crumble bacon. Shred Cheddar cheese, chop onion. Cook pasta. Defrost peas. Shred carrot. Drain tuna. Mix dressing ingredients. Combine with salad ingredients. Refrigerate overnight or at least 3 hours. Other vegetables may be added as desired such as cauliflower, etc.

    Tuna Melt


    INGREDIENTS


    1 (6 ounce) can tuna, drained and flaked


    2 tablespoons mayonnaise


    1 pinch salt


    1 teaspoon balsamic vinegar


    1 teaspoon Dijon mustard


    2 slices whole wheat bread


    2 teaspoons chopped dill pickle


    1/4 cup shredded sharp Cheddar cheese


    DIRECTIONS


    Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.


    In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.


    Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.








    Cheesy Tuna Casserole


    INGREDIENTS


    1 (16 ounce) package medium seashell pasta


    1 tablespoon vegetable oil


    1 (10.75 ounce) can condensed cream of mushroom soup


    1 (15 ounce) can mixed vegetables, drained


    1 (6 ounce) can tuna, drained


    2 cups shredded Cheddar cheese


    salt and pepper to taste


    DIRECTIONS


    Bring a large pot of lightly salted water to a boil. Add 1 tablespoon oil to the water to prevent sticking. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).


    In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese. Gently fold pasta into the soup mixture and mix thoroughly. Pour pasta and soup mixture into a 11x7 inch baking dish. Sprinkle remaining cup of cheese on top.


    Bake in a preheated oven until cheese is melted and bubbly.
    I usually get Albacore tuna go easy on the mayo, but I add limon, mustard, 21 seasonings, and a can of corn, and there you go a nice tasty tuna...
    For the flan case


    5 oz (150 g) wholemeal or plain flour


    pinch of salt


    4 tablespoons margarine


    5 - 6 teaspoons ice-cold water


    1 tablespoon wholemeal or plain flour for rolling out the pastry





    For the filling


    1 teaspoon margarine


    1 leek, thinly sliced


    1 small green or red pepper, cored, seeded and chopped


    3 oz (90 g) drained canned sweetcorn


    6 oz (180 g) drained canned tuna, flaked


    2 eggs


    1/4 pint (150 ml) skimmed milk


    1 tablespoon chopped parsley


    salt and pepper


    1 tomato, sliced








    method


    1. first of all, make the pastry. Stir the flour and salt together in a bowl.


    2. Add the margarine which, if possible, has been stored in the freezer. Rub it into the flour using the tips of your fingers and thumbs until the mixture resembles fresh breadcrumbs.


    3. Using a round-bladed knife, mix the cold water into the pastry to form a dough. if time allows, wrap the pastry in foil or clingfilm and chill for 20-30 minutes.


    4. Dust the rolling pin and a sheet of non-stick baking parchment with the remaining flour. Roll out the pastry a little larger than the 7 1/2 inch (19 cm) flan ring. Carefully line the flan ring with the pastry, gently pressing it down the sides.


    5. Trim the top edge. Lay a piece of baking parchment in the flan, weigh it down with a few dried beans or rice and bake at Gas Mark 6, 200掳C, 400掳F for 10 minutes, then remove the baking parchment and beans and bake for a further 4 - 5 minutes. Remove from the oven.


    6. Prepare the filling. Melt the margarine in a pan, add the leek and chopped pepper and stir-fry for 4 - 5 minutes.


    7. mix the leek, pepper, sweetcorn and tuna together. lightly beat the eggs and milk together, pour into the tuna mixture and add the parsley and a sprinkling of salt and pepper.


    8. Spoon the filling into the baked flan case and return to a preheated oven, Gas Mark 4, 180掳C, 350掳F for 25 - 30 minutes


    9. if the flan is to be served hot, arrange the slices of tomato on top and return to the oven for about 3 minutes. if it is to be served cold, remove from the oven, cool and garnish with the tomato before serving.
    ASIAN TUNA PATTIES





    INGREDIENTS


    2 (6 ounce) cans tuna, drained and flaked


    1 egg, beaten


    3/4 cup dry bread crumbs


    3 green onions, minced


    1 clove garlic, peeled and minced


    1 tablespoon soy sauce


    1 tablespoon teriyaki sauce


    1 tablespoon ketchup


    1 teaspoon sesame oil


    1 teaspoon black pepper


    1/2 cup cornmeal


    2 tablespoons vegetable oil


    DIRECTIONS


    In a large bowl, mix tuna, egg, bread crumbs, green onions, and garlic. Blend soy sauce, teriyaki sauce, ketchup, sesame oil, and pepper into the mixture. Form the mixture into about 6 patties approximately 1 inch thick. Lightly sprinkle each patty on all sides with cornmeal.


    Heat oil in a medium skillet over medium heat. Fry each patty about 5 minutes on each side, until golden brown.

    INGREDIENTS





    * 3 eggs


    * 1/4 pound processed American cheese, cubed


    * 1/2 cup mayonnaise


    * 1 (6 ounce) can tuna, drained and flaked


    * 2 tablespoons chopped green bell pepper


    * 2 tablespoons chopped onion


    * 2 teaspoons chopped sweet pickles


    * 2 tablespoons chopped stuffed green olives


    * 4 tablespoons butter


    * 8 hamburger buns





    DIRECTIONS





    1. Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop. Preheat oven to 300 degrees F (150 degrees C).


    2. In a mixing bowl, combine the American cheese, mayonnaise, chopped egg and tuna. Then mix in the green pepper, onion, chopped sweet pickles, and the chopped olives. Mix thoroughly.


    3. Butter the hamburger buns with about a 1/2 tablespoon for each. Fill the buns with the mixture and wrap in tinfoil.


    4. Bake in preheated oven for 30 minutes, or until cheese is melted.

    Water has much less calories in it. So if you're watching your weight, choose the water-packed one. Also watch for the tuna packed with reduced sodium.





    The oil they use to pack it with is the cheap stuff that really isn't good for you. High quality oils are not found in cheap tuna cans.





    As far as recipes are concerned, it doesnt matter which one you choose to cook with- but again, if you choose the oil, it will be higher in calories.

    GRILLED TUNA STEAKS WITH JAPANESE


    SAUCE





    4 yellow fin tuna steaks, 1-inch thick


    Sesame oil


    1 rounded tsp. cornstarch


    1/3 c. rice vinegar


    1/3 c. mirin


    1/3 c. soy sauce


    1 lb. spinach leaves, rinsed, stemmed and dried


    1 (6 oz.) box Saffron Rice, cooked per box directions


    3 tbsp. minced crystallized ginger

I make this dish for my vegetarian friends.
    1/4 cup olive oil


    4 teaspoons Old Bay Seasoning


    2 teaspoons lime juice


    2 teaspoons lemon juice


    1 lb tuna steaks





    Combine Olive Oil, Old Bay, Lime and Lemon Juice.


    Mix Well.


    Pour over Tuna Steaks and marinade 20 minutes, turning occasionally.


    Make sure grill is hot 鈥?place steaks in hottest section and Sear steaks 1 to 2 minutes per side to seal in the juices.


    Finish cooking just slightly away from the hottest area 鈥?8 to 10 minutes per inch of thickness.

    here is one:





    1 pkg. refrigerated crescent rolls (8 rolls)


    1 (9 1/4 oz.) can tuna, drained and flaked


    1/2 c. chopped celery


    1/4 c. green goddess salad dressing


    2 c. chopped lettuce


    2 med. tomatoes, sliced


    4 slices American cheese, halved diagonally (4 oz.)





    Unroll dough and separate into 8 triangles. Place in a greased 9 inch pie plate, pressing edges together to form a pie shell. Bake, uncovered, at 350 degrees for 10 minutes.


    Meanwhile, toss tuna and celery with salad dressing; spread mixture over partially baked shell. Sprinkle with chopped lettuce; arrange tomato slices atop. Bake, uncovered, 10 minutes longer. Top with cheese halves; bake 10 minutes more. Makes 6 servings.
