Help finding cream tuna recipe?

My mom used to make a creamed tuna on toast. I know she used cornstarch as a thickener and milk but the ones I have tried arent like hers.She was a fairly plain cook. Does anyone have a recipe? I remember vivdly that she sometimes put peas in it for my dad and would get mad at me because my plate would have a pile of peas left on it.Help finding cream tuna recipe?
CREAM OF TUNA ON TOAST





2 cans tuna, drained


4 eggs


1 can cream of celery soup


1 can milk


Salt %26amp; pepper





Boil eggs. Cover and remove from heat. Allow eggs to harden. Heat together on low heat 2 cans tuna, 1 can cream of celery soup, 1 can milk and salt and pepper. Peel eggs and mix together with other mixture. Toast 2 pieces of toast. Spoon mixture over toast.











CREAMED TUNA AND PEAS ON TOAST





1 tablespoon butter or margarine


1 tablespoon all-purpose flour


1/2 tsp salt


a few grinds fresh pepper


1 cup milk


1 can tuna, drained


1 can peas, drained


1 slice bread per person, toasted, buttered (opt)





Melt butter or margarine in a medium-sized saucepan over medium heat. Add flour, salt and pepper and stir until flour is slightly browned.





Remove from heat and slowly stir in milk until flour is incorporated. Return to heat and bring to a boil, stirring, for 1 minute, until thickened. Add drained tuna and peas and heat thoroughly, without boiling. Ladle over toast on plate or bowl and serve warm.

COMPANY CREAMED TUNA





2 tbsp. finely chopped onion


3 tbsp. butter (butter)


3 tbsp. all purpose flour


1/4 tsp. salt


1 1/4 c. milk


1/2 c. dairy sour cream


1 (6 1/2 - 7 oz.) can tuna, drained


3 tbsp. dry white wine


2 tbsp. snipped parsley


Toasted slivered almonds


Pastry shells





Cook onion in butter until tender but not brown. Blend in flour, salt and dash pepper. Add milk all at once; cook quickly, stirring constantly, until mixture thickens and bubbles. Stir in sour cream. Add tuna, wine and parsley. Heat through. Sprinkle with toasted almonds, if desired. Serve in pastry shells or spoon over hot butter toast points. Makes 4 servings.Help finding cream tuna recipe?
I would try a basic bechamel sauce. Use 1 tbs. each butter and flour (or cornstarch if you prefer) and combine in a heavy pan on medium heat until flour has had a chance to cook a bit so the starch doesn't have a raw flavor. Then add a cup of milk and cook through, whisking all the while, until the sauce thickens. Add a little salt, pepper, and nutmeg and you have your sauce. Then add your tuna, peas, etc. That should taste good.
My mom made creamed tuna on toast like that, too! I still love the taste of it, but prefer to have it on mashed potatoes. Here's how she, and I, make the creamed tuna:





3 tbl. butter


3 tbl. flour


salt to taste


1 陆 c. milk


6 oz. can tuna, drained





Melt butter in saucepan. Add flour and salt and blend till smooth. Add milk slowly, stirring rapidly to prevent lumping. Bring to a boil, stirring constantly. Reduce heat and cook 1 minute, stirring constantly. Add the tuna and stir. Cook 1 minute more. Then serve on toast. (Or mashed potatoes.)





If you want to use cornstarch instead of flour, use half the amount (1 陆 tbl.), mix it with the cold milk before adding it to the hot butter, and you don't need to cook it as long.
That is the only recipe for creamed tuna I could find for ya hun.





1 (6 ounce) can tuna, drained


1 (10.75 ounce) can condensed cream of celery soup


1 cup milk


8 slices bread


salt to taste


pepper to taste





In a medium saucepan over medium-low heat, mix tuna and soup. Gradually stir in the milk. Cook 5 to 10 minutes, stirring occasionally, until slightly thickened.


Toast the bread. Pour equal amounts of the tuna mixture over each slice of toasted bread and season with salt and pepper to serve.
Sour Cream Tuna Bake


8 ounces wide egg noodles


2 cans tuna, drained


1 1/2 cups sour cream


3/4 cup milk


1 (4 ounce) can mushroom pieces, drained


1 1/2 teaspoons salt


1/4 teaspoon pepper


1/4 teaspoon garlic powder


1/4 cup dry breadcrumbs


8 ounces shredded cheddar cheese


1/4 cup parmesan cheese


2 tablespoons melted margarine





1. Cook and drain noodles.


2. Return to kettle.


3. Stir in tuna, sour cream, milk, mushrooms, salt and pepper, garlic powder.


4. Pour into ungreased 2 quart casserole.


5. Mix bread crumbs, cheese and melted margarine.


6. Sprinkle over casserole.


7. Bake uncovered at 350 for 35 minutes.
