Interesting cod, haddock and tuna recipes?

My mum only ever buys those breaded cod fillets, which is getting very boring. so we were thinking about buying just plain fish fillets and using them in some tasty recipes.





does anyone have any tried-and-tested recipes for these types of fish?


the only idea i've had is some kind of tomato salsa topping for cod, but i wouldn't know what ingredients would need to be used etc etc.





and please can i have measurements in english terms - i.e not in 'cup' measurements, because we don't have any measuring cups.

greek style roast cod





8 sun-dried tomatoes (not in oil)


1 garlic clove, roughly chopped


large handful of fresh basil leaves, plus a few leaves to garnish


600ml/1 pint boiling water


700g/1 lb 9oz red-skinned potatoes, peeled and cut into slices 1cm/0.5in thick


2 red onions, cut into rings


2 tbsp black olives, pitted


4 x 150g/5oz skinless, boneless cod fillets


1 lemon


salt and freshly ground black pepper








1. Preheat the oven to 220C/425F/Gas 7.


2. Place the sun-dried tomatoes, garlic and basil in a mini-chopper or small food processor and blend until very finely chopped. Stir into the boiling water.


3. Arrange the potato slices and onion rings in a roasting tin and pour over the tomato and herb liquid. Season with salt and black pepper and roast for 30 minutes.


4. Once the potatoes are tender, scatter over the olives and arrange the cod fillets on top of the potatoes.


5. Cut four thin slices from the lemon and place one on each fillet. Squeeze over the juice from the rest of the lemon.


6. Season the fish, then return the roasting tin to the oven for 8-10 minutes until the fish is just cooked. Divide between plates and serve.

cod in butter sauce





ngredients: Serves 4


2 medium shallots, finely chopped


50g unsalted butter


4 medium sized cod steaks


Salt and pepper


Fresh lemon juice


Dash of lime juice


Salt and pepper to taste


Sprig of parsley, finely chopped





Cooking Instructions:





1. Melt the butter in a pan on a medium heat and add the shallot, cook for five or six minutes until they soften.





2. Put the fish into a greased oven proof dish, cover with the butter, shallots and pepper to taste. Then cook in a preheated over for five minutes at 220c.





3. Remove from the oven and cover the dish carefully with foil, reduce the heat to 180c and bake for a further 15-20 minutes. If the cod looks like it's drying out, baste with the butter and even add a little more if necessary.





4. When ready, remove the liquid into a small pan add a teaspoon of lemon juice and the parsley and stir over a medium heat for five minutes. Keep the fish warm and serve with the sauce, mashed potatoes and fresh peas or mange tout.Interesting cod, haddock and tuna recipes?
An excellent recipe for tuna patty is to :


Drain Tuna 6 oz add 3/4 cup or 5 or 6 squares crushed saltine crackers


TB spoon diced onion (optional)


salt and pepper to taste


1 egg mix and form palm size patties, Flatten!


In 1/2 inch Oil, hot! fry, 2 to 3 minutes .


Flip and fry 2 to 3 minutes on other side.


Place on paper towel to absorb and excess oil.


Place a slice American cheese and patty on hamburger bun,


Add Lettuce and tomato if you like.


I have not tried Salmon yet but someday LOL

cook a tuna fillet on each side but leaveing the middle raw with lemon, olive oil and soy sauce


then cut into thin slices


then put on a plate and dribble olive oil over it , sprinkle salt and a bit of soy sauce
Baked Cod Portuguese





SERVES 4





Ingredients


29.58 ml olive oil


1.00 onion, peeled and chopped


2.00 garlic cloves, peeled and chopped


1.00 green pepper, cored and chopped


1 (397 g) can tomatoes, chopped


9.86 ml paprika


4.00 cod steaks or fillets


chopped fresh parsley (to garnish)





Directions


1 Preheat the oven to 375F or 190C and grease an ovenproof dish.


2 Fry the onion, garlic and pepper in a pan to soften. Add the tomatoes and paprika and simmer for about 5 minutes until the sauce is thickened. Taste and add salt and pepper if required.


3 Put your cod in the dish, pour your tomato sauce over and bake in the oven for about 20 minutes until the cod is cooked. Sprinkle the parsley over and serve.





Easy One-Dish Quinoa and Tuna





Ingredients


354.89 ml quinoa


709.77 ml chicken broth


177.44 ml frozen spinach


0.33 onion, diced


4.93 ml minced garlic (depending on how garlicky you like it!)


2.46 ml italian seasoning


salt (to taste)


170.10 g tuna (splurge on the good kind, it really tastes better)


118.30 ml cheese (optional)





Directions


1 Combine all ingredients except cheese and tuna in a medium sauce pan.


2 Cover with lid and bring to a boil.


3 Turn down heat and simmer for 15 minutes or until liquid is absorbed. Remove from heat and add cheese and tuna. Enjoy!





Panko Haddock


Ingredients


453.59 g haddock


473.18 ml panko


236.59 ml milk


118.30 ml butter


29.58 ml lemon juice





Directions


1 Preheat over to 500 degrees. Heating at a higher tempeture for lower time keeps the fish moist- especially with milk.


2 Clean fish well. Make sure to dry well. Cut into equal serving pieces.


3 Place milk and breadcrumbs in seperate bowls.


4 Soak fish in milk. This is the key to make it moist.


5 Coat fish with panko breadcrumbs. Make sure to add seasoning to plain panko crumbs. I use oregano, pepper, ground mustard -- and have added hot peppers (but I like a little spice in everything). The key is adding some seasoning to the Panko breadcrumbs.


6 Spray a glass cooking dish with PAM.


7 Place each coated filet in the glass dish.


8 Drizzle lemon juice equally over fish.


9 Melt butter in micowave.


10 Drizzle melted butter over fish.


11 Cook for 15 minutes.


12 Enjoy.

Its very very simple, just use canned chicken breast, easier than how we did it.





I dont measure EVER, everything is to taste so experiment, but this will be the best chicken salad you've ever had.

Curry chicken salad





2 chicken breasts shredded


2 sticks of celery diced


2 green onions sliced


1/2 apple apple diced


1/3 cup mayo


1 tbs spoon curry powder

Saute chicken seasoned with salt and pepper until cooked through, then cool. While chicken is cooking dice celery, apple, and green onion. In a bowl combine mayo, curry, sugar, lemon juice and salt and pepper. When chicken is cool shred with a fork. Combine chicken, vegetables, and dressing. Enjoy

Old Fashioned Potato Salad





INGREDIENTS


5 potatoes


3 eggs


1 cup chopped celery


1/2 cup chopped onion


1/2 cup sweet pickle relish


1/4 teaspoon garlic salt


1/4 teaspoon celery salt


1 tablespoon prepared mustard


ground black pepper to taste


1/4 cup mayonnaise








DIRECTIONS


Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.


Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.


In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.



this is a very good and easy chicken salad;





2 1/2 cups diced and chilled, cooked chicken meat


1 cup chopped celery


1 cup sliced, seedless grapes


1/2 cup sliced almonds


2 tablespoons chopped fresh parsley


1 teaspoon salt


1 cup mayonnaise


1/4 cup heavy whipping cream





In a medium bowl, whip cream to soft peaks.


Combine meat, celery, grapes, almonds, parsley, salt, and mayonnaise with whipped cream. Chill.

BOMBAY CHICKEN SALAD - or replace chicken with diced potato and works great





2 c. cooked diced chicken


1/2 c. raw rice, cooked


1/2 c. India or sweet pickle relish


1/2 c. mayonnaise


3 tbsp. sour or heavy cream


1 can pimento, chopped


1 c. shredded coconut


Paprika





Combine chicken, rice and relish; toss until well blended. Mix mayonnaise and cream; add to chicken mixture. Add pimento and coconut; garnish with mayonnaise and paprika. Serve at room temperature. Serves 4

BOMBAY CHICKEN PASTA SALAD IN CREAMY CURRY


DRESSING - you can replace chicken with tuna and add avocado pieces (1 can of tuna, 1 avocado chopped)





1/4 lb. rotelle pasta


1 whole boneless chicken breast, grilled/sauteed in oil %26amp; cut into bite size pieces


5 cherry tomatoes


2 scallions, sliced thin


1 tbsp. finely chopped fresh basil leaves





DRESSING:





1/2 tsp. minced garlic


1 tsp. minced fresh ginger root


3 tbsp. unsalted butter


1/2 c. heavy cream


1 tbsp. white wine vinegar


3/4 tsp. curry powder


Red pepper flakes to taste


1 tbsp. chopped mango chutney





Cook pasta in boiling salted water until tender. Rinse with cold water and drain. Combine in a bowl pasta, chicken, tomatoes, scallions and basil.


DRESSING: Cook garlic and ginger root in butter over low heat until garlic is softened. Add cream, whisk until slightly thickened. Whisk in vinegar, curry powder, pepper flakes and chutney.





Add dressing to pasta mixture, toss until well mixed. Season with salt and pepper. Serves 2.



I have a no mayo potato salad recipe. So you can leave it out, it should be served room temp.





Boil potatos just until they are tender. Basically however you like your potatoes to be.





slice them up and while they are warm add 1/2 cup chicken stock and 4 tbsp white wine. the liquid will soak up. salt and pepper to taste.





while that is soaking make your vinegarette.

3 tbsp white vinegar


2-3 tbsp of grey poupon


salt pepper


Whisk and pour all over...then chop up some tarragon, chives and parsley to add some color. THis is such a great yummy salad.
Make a healthy salad with Tuna, chicken, potato and also you can put avocado and feta cheese and the dressing with extra virgin olive oil and serves for two people.

Spicy mac and cheese w/ tuna

Help finding cream tuna recipe?

My mom used to make a creamed tuna on toast. I know she used cornstarch as a thickener and milk but the ones I have tried arent like hers.She was a fairly plain cook. Does anyone have a recipe? I remember vivdly that she sometimes put peas in it for my dad and would get mad at me because my plate would have a pile of peas left on it.Help finding cream tuna recipe?
CREAM OF TUNA ON TOAST





2 cans tuna, drained


4 eggs


1 can cream of celery soup


1 can milk


Salt %26amp; pepper





Boil eggs. Cover and remove from heat. Allow eggs to harden. Heat together on low heat 2 cans tuna, 1 can cream of celery soup, 1 can milk and salt and pepper. Peel eggs and mix together with other mixture. Toast 2 pieces of toast. Spoon mixture over toast.











CREAMED TUNA AND PEAS ON TOAST





1 tablespoon butter or margarine


1 tablespoon all-purpose flour


1/2 tsp salt


a few grinds fresh pepper


1 cup milk


1 can tuna, drained


1 can peas, drained


1 slice bread per person, toasted, buttered (opt)





Melt butter or margarine in a medium-sized saucepan over medium heat. Add flour, salt and pepper and stir until flour is slightly browned.





Remove from heat and slowly stir in milk until flour is incorporated. Return to heat and bring to a boil, stirring, for 1 minute, until thickened. Add drained tuna and peas and heat thoroughly, without boiling. Ladle over toast on plate or bowl and serve warm.

COMPANY CREAMED TUNA





2 tbsp. finely chopped onion


3 tbsp. butter (butter)


3 tbsp. all purpose flour


1/4 tsp. salt


1 1/4 c. milk


1/2 c. dairy sour cream


1 (6 1/2 - 7 oz.) can tuna, drained


3 tbsp. dry white wine


2 tbsp. snipped parsley


Toasted slivered almonds


Pastry shells





Cook onion in butter until tender but not brown. Blend in flour, salt and dash pepper. Add milk all at once; cook quickly, stirring constantly, until mixture thickens and bubbles. Stir in sour cream. Add tuna, wine and parsley. Heat through. Sprinkle with toasted almonds, if desired. Serve in pastry shells or spoon over hot butter toast points. Makes 4 servings.Help finding cream tuna recipe?
I would try a basic bechamel sauce. Use 1 tbs. each butter and flour (or cornstarch if you prefer) and combine in a heavy pan on medium heat until flour has had a chance to cook a bit so the starch doesn't have a raw flavor. Then add a cup of milk and cook through, whisking all the while, until the sauce thickens. Add a little salt, pepper, and nutmeg and you have your sauce. Then add your tuna, peas, etc. That should taste good.
My mom made creamed tuna on toast like that, too! I still love the taste of it, but prefer to have it on mashed potatoes. Here's how she, and I, make the creamed tuna:





3 tbl. butter


3 tbl. flour


salt to taste


1 陆 c. milk


6 oz. can tuna, drained





Melt butter in saucepan. Add flour and salt and blend till smooth. Add milk slowly, stirring rapidly to prevent lumping. Bring to a boil, stirring constantly. Reduce heat and cook 1 minute, stirring constantly. Add the tuna and stir. Cook 1 minute more. Then serve on toast. (Or mashed potatoes.)





If you want to use cornstarch instead of flour, use half the amount (1 陆 tbl.), mix it with the cold milk before adding it to the hot butter, and you don't need to cook it as long.
That is the only recipe for creamed tuna I could find for ya hun.





1 (6 ounce) can tuna, drained


1 (10.75 ounce) can condensed cream of celery soup


1 cup milk


8 slices bread

In a medium saucepan over medium-low heat, mix tuna and soup. Gradually stir in the milk. Cook 5 to 10 minutes, stirring occasionally, until slightly thickened.

Sour Cream Tuna Bake


8 ounces wide egg noodles


2 cans tuna, drained


1 1/2 cups sour cream


3/4 cup milk


1 (4 ounce) can mushroom pieces, drained


1 1/2 teaspoons salt

1/4 teaspoon garlic powder


1/4 cup dry breadcrumbs


8 ounces shredded cheddar cheese


1/4 cup parmesan cheese


2 tablespoons melted margarine





1. Cook and drain noodles.


2. Return to kettle.


3. Stir in tuna, sour cream, milk, mushrooms, salt and pepper, garlic powder.


4. Pour into ungreased 2 quart casserole.


5. Mix bread crumbs, cheese and melted margarine.


6. Sprinkle over casserole.


7. Bake uncovered at 350 for 35 minutes.

    1 pkg. egg noodles


    1 celery stalk (chopped)

    1 1/2 c. cheddar cheese


    1/2 c. mozzerella cheese


    Note: 1 pkg. frozen (thawed) mixed peas and carrots may be substituted for canned.


    Boil noodles as directed on package, adding onion and celery the last 1-2 minutes. Drain noodles and add tuna, soup and vegetables, stirring until well blended.





    Spread into a 13x9 baking pan, spreading cheese on top.

    - 1 can of light tuna


    - 3 spoons of light mayo (or more)


    - 2 chopped slices of onion


    -1/2 chopped tomato


    -1 lettuce leaf


    -2 slices of brown bread





    Mix everything but the lettuce and put it in the sandwich with the lettuce.

    This is something my Mom came up with years ago and its one of the few things she made up we like and still make. Its a great dinner when its hot outside


    Tuna Ole


    1head of lettuce, or a bag of salad mix


    1drained can of tuna


    2 cups cooked and cooled rice


    1 bunch chopped green onions


    few dashes of hot sauce, to taste


    zesty italian dressing





    toss it all together with some of the dressing, don't make it too wet.


    Serve on a bed of fritos with extra hot sauce

    After the pasta is cooked and still warm, add the tuna and the soup (do not add water) and stir. Done! You can put it in a casserole dish and add cheese and nuke or broil it until the cheese melts. You don't need to ';bake'; it - just till the cheese melts.

    i like it with low fat mayo (not the stuff thats considered dressing, but the actual mayo stuff its tastes SO much better) and crackers, or one serving of potato chips used as crackers. i love my tuna plain on salt and vinegar or any other flavored thick cut kettle chip used likea cracker, so good, tasty and if you keep your portions controlled very very healthy!
    Get a multi grain wrap-they have kinds that r 50 calories. Speard lightly , 1 tablespoon of fat free or lowfat mayo on the wrap, and you can add some tuna

    Make a spaghetti sauce with tinned tuna - a milk base sauce

    peel, clean, and boil a few potatoes, (any kind).


    after they are soft, mix mashed potatoes with tuna (drained) that was in veggie oil. (1 potatoe per 1 can tuna)


    add one egg, salt and pepper, and combine all ingrediants well. form small patties out of mixture. Add a small amount of olive oil to a non-stick pan, cook on medium heat for 4 min., flipping patty over once. add veggies as a side...........tastes wonderful.

    when the rest of the contacts get a hold of this one you might be in trouble Jill but I'm going to give you a serious answer. I've done this with salmon and it was yummy but the original recipe calls for tuna:





    2 c diced papaya


    1/2 red onion, diced


    1 red bell pepper, diced


    1/4 c chopped fresh cilantro


    2 T lime juice


    1 clove garlic, minced (I usually use 2 or 3 but I'm a garlic-fiend)


    1/4 tsp hot sauce


    4 (6 oz) tuna steaks


    1/4 c extra-virgin olive oil


    salt and pepper to taste


    3 eggs


    1/2 c chopped macadamia nuts





    DIRECTIONS


    Combine the papaya, onion, and red pepper in a bowl. Add the cilantro, lime juice, garlic, and hot sauce. Toss to combine, then refrigerate until ready to serve.


    Preheat an outdoor grill for high heat, and lightly oil grate.


    Brush the tuna steaks with olive oil, then season with salt and pepper. Whisk the eggs in a shallow bowl until smooth. Dip the tuna steaks in the egg, and allow excess egg to run off. Press into the macadamia nuts.


    Cook the tuna steaks on the preheated grill to your desired degree of doneness, about 2 minutes per side for medium. Serve with the papaya salsa.

    Here are a few recipes we love.............





    MARINATED TUNA STEAKS


    INGREDIENTS............


    1/4 cup orange juice


    1/4 cup soy sauce


    2 tablespoons olive oil


    1 tablespoon lemon juice


    2 tablespoons chopped fresh parsley


    1 clove garlic, minced


    1/2 teaspoon chopped fresh oregano


    1/2 teaspoon ground black pepper


    4 tuna steaks


    DIRECTIONS


    In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.


    Preheat grill for high heat.


    Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.





    GRILLED TUNA


    INGREDIENTS............


    1/2 cup pineapple or other tropical fruit preserves


    1/4 cup hoisin sauce


    2 tablespoons lime juice


    1 tablespoon chopped fresh cilantro


    1 teaspoon grated fresh ginger


    1 teaspoon sesame oil


    4 tuna steaks, about 1 inch thick


    DIRECTIONS


    To prepare marinade, combine preserves, hoisin, lime juice, cilantro, ginger, and sesame oil in a small bowl. Stir well.


    Pour into a resealable plastic bag or glass bowl; toss tuna with marinade to coat. Refrigerate for 1 hour.


    Preheat an outdoor grill for high heat and lightly oil grate.


    Remove tuna steaks from marinade, shake off excess, and discard remaining marinade. Cook on preheated grill for 4 to 5 minutes per side. Be careful not to overcook - the tuna should be lightly browned on the outside but still slightly pink in the middle. Serve immediately.





    BLACKENED TUNA


    INGREDIENTS.............


    2 tablespoons olive oil


    2 tablespoons lime juice


    2 cloves garlic, minced


    4 tuna steaks


    1 fresh mango - peeled, pitted, and chopped


    1/4 cup finely chopped red bell pepper


    1/2 Spanish onion, finely chopped


    1 green onion, chopped


    2 tablespoons chopped fresh cilantro


    1 jalapeno pepper, seeded and minced


    2 tablespoons lime juice


    1 1/2 teaspoons olive oil


    2 tablespoons paprika


    1 tablespoon cayenne pepper


    1 tablespoon onion powder


    2 teaspoons salt


    1 teaspoon ground black pepper


    1 teaspoon dried thyme


    1 teaspoon dried basil


    1 teaspoon dried oregano


    1 tablespoon garlic powder


    4 tablespoons olive oil


    DIRECTIONS


    Whisk together the olive oil, lime juice, and garlic in a bowl. Rub the tuna steaks with the mixture. Place the steaks in a sealable container and chill in refrigerator 3 hours.


    Combine the mango, bell pepper, Spanish onion, green onion, cilantro, and jalapeno pepper in a bowl; stir. Add the lime juice and 1 1/2 teaspoons olive oil and toss to combine. Chill in refrigerator 1 hour.


    Stir together the paprika, cayenne pepper, onion powder, salt, pepper, thyme, basil, oregano, and garlic powder in a bowl. Remove the tuna steaks from the refrigerator and gently rinse with water and then dip each side of each steak in the spice mixture to coat.


    Heat 2 tablespoons olive oil in a large skillet over medium heat. Gently lay the tuna steaks into the hot oil. Cook the tuna on one side for 3 minutes; remove to a plate. Pour the remaining 2 tablespoons olive oil into the skillet and let it get hot. Lay the tuna with the uncooked side down into the skillet and cook another 3 minutes; remove from heat immediately.


    Spoon about 1/2 cup of the mango salsa onto each of 4 plates. Lay the tuna steaks atop the salsa and serve immediately.





    TOMATO-CHEESE TUNA STEAKS


    INGREDIENTS............


    1 tablespoon olive or canola oil


    4 tuna or salmon steaks


    1/2 teaspoon salt


    1/8 teaspoon pepper


    1/3 cup loosely packed fresh basil leaves


    1 medium tomato, chopped


    1/4 cup shredded part-skim mozzarella cheese


    DIRECTIONS


    In a large nonstick skillet, heat oil over medium heat. Add the tuna steaks; cook for 3 minutes on each side or until fish flakes easily with a fork. Transfer to a broiler pan. Sprinkle fish with salt and pepper. Cover with basil leaves. Top with tomato and cheese. Broil 4-6 in. from the heat for 2 minutes or until the cheese is melted.

    ***5 Spice Sesame Tuna and Avacado***





    2 avocados


    Juice of 1/2 lime


    1/3 cup balsamic vinegar (eyeball it)


    1/4 cup Tamari (dark soy sauce)


    3 tablespoons honey (eyeball it)


    2 tablespoons vegetable oil


    Four tuna steaks (6 ounces each)


    2 teaspoons Chinese five-spice powder (available on the Asian food aisle or in the spice section at the grocery store)


    Salt and pepper


    1/2 cup toasted sesame seeds


    1/4 cup snipped chives


    1/2 head iceberg lettuce, shredded





    Preparation


    Thickly slice the avocados lengthwise and coat with lime juice to prevent browning; set aside. In a small saucepan over medium-high heat, bring the vinegar, Tamari and honey to a low boil. Lower the heat and simmer until syrupy, 6-7 minutes. Set aside.





    In a large skillet, heat the oil over high heat. Sprinkle the tuna with the five-spice powder and season with salt and pepper. Place the tuna in the skillet and cook, turning once, until just browned, 1-2 minutes on each side. Slice the tuna and top with the sesame seeds and chives.





    Divide the lettuce among four plates and top with the tuna and avocado. Drizzle with the dressing.

    DIRECTIONS


    1. Heat oven to 350掳F. Grease 2-quart casserole. In large saucepan or Dutch oven, cook macaroni to desired doneness as directed on package. Drain; return to saucepan.

    I like to make a mock version of ceviche to toss with penne or bowtie pasta %26amp; it is really good:





    1 (6 ounce) can solid white tuna packed in water


    1 fresh jalapeno chile, seeded and minced (more or less to taste or substitute green bell pepper)


    1 small red onion, peeled and finely chopped (omit if you don't like onion)


    1 ripe tomato, diced


    1 tablespoon chopped fresh cilantro (or the kind in the tube is good, but cilantro is a key ingredient IMO)


    Salt to taste


    Freshly ground black pepper to taste


    1/4 cup fresh lime juice (1-2 limes)


    2-3 tablespoons extra virgin olive oil


    Just mix above ingredients %26amp; toss with pasta. Yum!









    TUNA %26amp; VEGETABLE CANNELLONI





    green beans

    2 small cans tuna fish in oil


    12 dry cannelloni


    tomato sauce


    mayonnaise





    Prepare home made tomato sauce with olive oil, onion and canned crushed tomato.





    Boil the cannelloni in salty water. Boil in vapor the green beans.





    In a bowl place the the beans, add the finely cut tomatoes and mix in Modena vinegar and extra virgin olive oil, add the oregano, salt and pepper, 1 finely cut boiled egg, and the 2 tuna fish cans. Add the mayonnaise and mix everything together.





    Place the 12 boiled cannelloni on a board and cover them with the mix.





    Roll them and place them on a oven-resistant metallic container. Cover the cannelloni with the tomato sauce and put the on the pre-heated oven, maximum temperature for 10 minutes. Serve.





    Makes 4 servings.

    1 ahi tuna steak, 6 ounces


    2 teaspoons five-spice powder, available on spice aisle


    1 teaspoon grill seasoning, such as Montreal Steak Seasoning, or salt and coarse pepper


    Cooking spray or vegetable oil, for brushing the grill pan





    Directions


    Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.





    Slice tuna on an angle and eat!



    I never made it myself because you just can't get fresh ahi tuna here in NY. But this sounds easy and good.





    1 lb very fresh tuna, cut 1 inch thick (2 steaks)


    2 tablespoons melted butter


    1/2 teaspoon fresh ground black pepper


    1/2 teaspoon granulated garlic powder


    2 tablespoons extra virgin olive oil





    Directions


    Melt butter in a small casserole dish (in a microwave).


    Place tuna steaks into the melted butter and coat all sides.


    In a small bowl, mix together coarse black pepper and granulated garlic powder.


    Heat olive oil and any left over butter in a heavy-bottom frying pan on medium-high heat.


    Add tuna steaks and sear for 45 seconds, then turn over and sear for another 45 seconds.


    DO NOT OVERCOOK TUNA STEAKS.


    Just make sure that you have a light crust on each side.


    Let fish rest for 2 minutes before slicing.


    You may serve whole or cut into thin slices.


    Serve on cooked rice
    Try rolling the tuna steak in toasted pecans or pistachios. Serve with brown rice or wild rice and asparagus slightly crispy. You can also serve with couscous.

    1 tbs. olive oil

    2 tbs fresh chopped herbs, either Italian flat-leaf parsley or basil

    Tuna Twist (Tuna Macaroni Salad):





    30 min 15 min prep


    8 servings





    2 (6 ounce) cans light chunk tuna in water, drained


    8 ounces macaroni or shaped pasta


    1 cup frozen peas


    1/3-1/2 cup finely chopped onions, i like vidalia


    1 cup chopped celery


    1 cup mayonnaise (plus more if needed)


    2 tablespoons cider vinegar (*)


    1 tablespoon dried dill


    1 dash pepper


    salt





    1. Cook pasta according to directions.


    2. Put frozen peas in colander and drain pasta over peas.


    3. In large bowl mix mayonaise and vinegar.


    4. Add pasta and peas and mix well.


    5. Add remaining ingredients mixing well.


    6. Taste to adjust seasonings.


    7. Place in fridge for flavors to blend (or eat as is if you can't wait).


    8. You might want to add additional mayonaise after salad has been refrigerated, because some of the mayonaise will';soak'; into pasta.


    9. *This is the amount of vinegar the original recipe calls for -- I have been cutting down to one tablespoon.
    I have always made alot of tuna salad and I think the secret is using mayo. It makes for a tasty tuna salad.

    Is it fresh cooked tuna or tinned and is the salad to include beans, bread etc or are you not fussy please add to your question as I'm nervous about passing on a recipe!
    Simple and the best: Combine, tuna, finely chopped celery and onions, grated carrots, with mayonaise, amounts to your liking. When I'm watching calories, I add more celery %26amp; carrots than normal, but once you chill this for about an hour, it's delicious!

    Do yourself a favour and go to your supermarket to the fish counter and buy some fresh fish. You can find a ton of ways to cook it online, it's super duper easy.





    Fish goes well generally with lower calorie sides, like sweet potatoes or salads or rice.





    Seriously there's better things than canned tuna, and if that's all you eat to lose weight then if you're like everyone else you'll just end up losing the diet because of losing interest.





    Keep those tastebuds happy. Fish is easy, simple, and fun to cook from scratch, try it. It's only a couple more steps than canned, and won't at all taste like health food, even though it's really good for you.
    Drain tuna, add hard boiled egg (chopped up), mao, celery and a little pickle relish. Serve either on a bed of lettuce or bread.

    Try the tuna in oil, not water..buy won ton wraps..they have it at Vons or Albertsons now..simply wrap, seal w/water and pan fry in olive or peanut oil..(verry little oil if you want)..tastes great and you don't need to add salt or pepper unless you want to.

    3 cans tuna in water


    1/4 red onions


    1/8 celery [opt]


    5 teaspoons fresh dill


    2 teaspoons mixed sprouts [opt]


    1 teaspoon mustard powder


    2 teaspoons Dijon mustard


    3 teaspoons mayonisse


    1 dash onion powder


    1 dash mccormick garlic and herb seasoning [opt]








    1. Take the cans of tuna and place them in a mixing both with water. [do not drain]


    2. Chop red onion, celery, dill and sprouts.


    3. Place red onion, celery, dill and sprouts in tuna and mix with fork until tuna, and the other ingredients reach a paste type consistency.


    4. Mix in powdered mustard -- be sure all is mixed in evenly.


    5. Mix in dijon mustard -- be sure all is mixed in evenly


    6. Taste -- make sure the ingredients are mixed to your liking -- add extra of dill, red onion, celery, powdered mustard or dijon if desired


    7. Add dash of onion powder and McCormick Garlic and Herb powder (or McCormick garlic and dill powder, or plain garlic powder).


    8. Taste -- if desired put a few more dashes inches


    9. Make sure is mixed evenly and put mayonnaise in -- if more is desired -- put more in! Put each teaspoon in separately so not too much or too little is put in -- I am not much of a mayo person so for me less is more :).


    10. Mix evenly and put on a sandwich with tomato and sprout or even melted with swiss cheese for a tuna melt! You can even toss with lettuce and tomatoes for a great salad!
    You can make tuna cakes...these are nice for dinner...





    1 can (7 1/2 oz.) tuna


    1 tbsp. finely minced onion


    1/4 c. mayonnaise


    1 egg, slightly beaten


    2 tbsp. lemon juice


    1/4 tsp. salt %26amp; a little pepper


    1 1/2 c. soft bread crumbs


    1 tbsp. butter


    1 tbsp. oil





    Drain tuna and chop coarsely. Combine tuna, onion, mayonnaise, egg, lemon juice, salt, pepper and 3/4 cup bread crumbs in bowl. Mix well. Divide into 3 portions. Roll each portion in remaining bread crumbs and form into 3 patties. Refrigerate 1 hour.





    Heat butter and oil in skillet over medium heat, cook cakes 3 to 4 minutes on each side until golden brown. Serve with tartar sauce.
    Okay, I know this is not a tuna recipe but we low carb and this is one of our favorites. We make up the Knorr's Spinach Dip. You can eat it with celery or carrots but in addition to using it as a dip we stuff chicken breasts with it.





    Take boneless, skinless chicken breasts (I know you can have the skin on a protein diet but we try to minimize the fat when we can), place between two sheets of plastic wrap and pound to make a thinner bigger filet. Season take a couple of tablespoons of the Knorr's Spinach Dip and place in the center of the breast and fold over. Secure with a toothpick. Then season the outside with a little salt, pepper and garlic powder.





    You can then cook one of two ways. Either place on a baking sheet, give a spray with cooking spray (to help brown) and bake for about 20 minutes at about 350.





    Or you can heat a skillet with a little oil and brown the chicken in a skillet, medium high heat for about ten minutes. Turn and brown other side for about ten minutes.





    This is wonderful and easy. Hope you enjoy! A nice change from tuna (of which we eat tons too, have eggs boiling as I type.)

    We don't eat Tuna Casserole, but I am famous in my family for my mac and cheese. I am sorry, but I do everything froms scratch and don't really use exact recipes so I will try the best I can





    1 package of large elbow noodles


    milk


    flour


    salt and pepper and parika


    Cheeses- Parmesan, Irish Sharp White Cheddar Cheese (can use regular too), American Cheese (2 slices), Longhorn Cheddar Cheese, and Pepperjack cheeses


    1 can of mexican style rotel diced tomatoes





    If you don't like spice omit the tomatoes.





    Make a rou with the flour and butter and them add milk





    When it comes to a boil and starts to thicken add cheeses reserving some for the top and also add in the rotel tomatoes.





    Butter a casserrole dish- put in cooked aldente noodles and pour mixture over top- mix in and add some cheese on top and top with finely crushed tortilla chips if making spicy and if not just top with breadcrumbs.     Mac %26amp; Cheese- Cook small elbow macaroni as directed on package. (Use Med heat) In a sauce pan add 1tbl of butter and melt add a good size teaspoon of flour to butter and stir. Let cook for 30 -60 sec. Add a 1/4-1/3 cup off milk to flour mixture and stir. Mixture should be fairly think not watery. Add 2-3 cups of grated sharp cheddar. Season with salt,pepper and a small dash of garlic powder.





    Tuna Casserole- Follow above and add can of cream of mushroom soup (solid, no liquid added) and 1 can of tuna. Serve and sprinkle with extra cheese.
    Here's a simple Tuna Noodle Casserole recipe.


    Cook noodles ( I use no yolk noodles)


    Drain water, and mix noodles with a can of tuna (drained), a can of peas (drained), a can or 2 of cream of mushroom soup. Top with crushed chips. Bake for 45 minutes until heated through-375 degrees.

    1 pkg. (16 oz.) elbow macaroni, uncooked





    1/4 cup (1/2 stick) butter or margarine





    1 egg





    2-1/2 cups milk





    1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up, divided





    2 cups KRAFT Shredded Cheddar Cheese, divided

    PREHEAT oven to 350掳F. Cook macaroni as directed on pkg. Meanwhile, cut butter into small pieces; place in bottom of 13x9-inch baking dish.





    BEAT egg and milk with wire whisk until well blended; set aside. Drain macaroni. Spoon half of the macaroni over butter in baking dish; sprinkle with 1 cup each of the VELVEETA and Cheddar cheese. Add half of the egg mixture. Repeat layers of macaroni, VELVEETA, Cheddar cheese and egg mixture. Sprinkle lightly with paprika.





    BAKE 15 min. Remove from oven; stir until well blended. Bake an additional 15 min. or macaroni mixture is until heated through and top is golden brown.

    you will need;


    5 cans tuna


    4 cans golden mushroom soup(Campbell's)

    2 packages 16 oz American beauty krinkly noodles


    I package 16 oz chow mien noodles


    (cream of mushroom soup may be substituted if you don't like the golden, plain potato chips may be substituted for chow mien noodles if desired)


    Cook noodles til done but not mushy.


    In large mixing bowl mix soups and tuna until thoroughly blended, add cooked noodles and half package chow mien noodles mix until noodles are thoroughly coated.. Pour mixture into large baking dish, then sprinkle remaining chow mien noodles over top of casserole. Cover and bake 15 minutes, then uncover and bake 20 minutes or until bubbly and lightly golden...     Boil shells (almost done), slice velveeta into squares (half a pinky size) pour shells in a big bowl add cup of milk shells and rest of ingredients stir. Pour into pan if the milk is not even with the shells (lil above them) then add some milk. Put in oven (375-400) wait till brown and smell that delicious SMELL of Macaroni and Cheese.

    Cold tuna salad sandwich:


    tuna, onion, celery, salt and miracle whip, two good slices of bread or a nice hoagie roll, kaiser or crossant, slice of mozzarella and lettuce.





    Hot tuna melt:


    tuna, salt, miracle whip, onion, olives and hard boiled egg, slice of chedder cheese and pile on bun and bake in oven.





    Tuna macaroni salad:


    2 c.Macaroni boiled, drained and flaked tuna


    can of peas drained, diced onions, salt and dill weed and mix with miracle whip (may add chopped olives and or celery)

    Ok...I am kinds weird about Tuna...I like it but I like it to not be fishy. Drain the tuna and rinse it with fresh water then drain again. Add low fat Mayo to taste. Next add avocado...I like a good amount in mine. It goes great with Pita chips...or in a sandwich of course. It is really good...and if you have Lemon Peper then I highly recommend that also. Or if not avocado then try relish!

    CRUST:


    1 cup flour


    1/2 cup mashed potato flakes


    1/2 cup butter


    3 to 4 tablespoons ice water


    1 can (2.8 ounces) french-fried onions, divided





    FILLING:


    3/4 cup mashed potato flakes


    1 cup shredded cheddar cheese, divided


    2 tablespoons chopped stuffed green olives


    1 can (6-1/2 ounces) tuna, drained


    1 can (10-3/4 ounces) condensed cream of mushroom soup, reduced sodium preferred


    1 egg








    SERVINGS 6-8





    DIRECTIONS


    In a medium bowl, combine the flour and potato flakes; cut in butter until crumbly. Add water, 1 tablespoon at a time, until dough is just moist enough to hold together. Press pastry over bottom and up sides of ungreased 9-in. or 10-in. pie plate. Flute edge. Reserve 1/2 cup onions; set aside. Sprinkle remaining onions into pastry shell.





    In medium bowl, combine all filling ingredients except 1/2 cup of cheese. Spoon tuna filling into pastry crust. Bake at 350掳 for 25-30 minutes or until crust is golden. Sprinkle with reserved cheese and onions; bake for an additional 5-10 minutes or until cheese is melted. Let stand 5 minutes before serving.
    Throw some cheese, peas, and anything else you have, b/c it's gonna take a lot to mask that fishy taste! haha
    Tuna casserole is one of my favorites. You boil some noodles and when they are done drain them and add some tuna and some cream of mushroom soup.





    or if you just want the tuna put in a little mayo, a very small amount of mustard and some pickle relish and you can also add boiled eggs and some people even add onions depending on what you like. It's good as a sandwich or on some club crackers.

    Tuna 1 can, drain, do not wash it. Break them with a fork. Add mayonnaise, little red onion chopped, little green pepper (capsicum), green chili chopped, salt, crushed pepper and diced tomatoes, mix them well. Spread it on a slice of bread or hot dog roll....eat it....and reply to me.

    We like to take the canned tuna and mix it with a little diced onion and mayo and then my hubby likes it as a blob sitting on top of a nice tossed salad made with lettuce, radishes, carrots, celery, and tomatoes. I like my ';blob'; mixed into the tossed salad with a little extra mayonnaise added. On occasion I'll put half an avocado on top of the salad and sprinkle some black pepper over it.
    In a medium bowl I pour a small container of small curd cottage cheese, add a can of drained tuna, dice up a small tomato.. Mix together. May add small cubed cheese if you plan on eating all that same day Eat like that or cut the top off a raw tomato and fill the hollowed out tomato with the mixture. Great for a lunch time snack.
    This is a recipe for a real dressed up Tuna Noodle. My husband never cared for it at all in the past, but he can't get enough of this one.





    CHEESY TUNA NOODLE CASSEROLE


    1 (12 1/2 oz.) can chunk light tuna in water


    1 pkg. frozen vegetables


    1 (12 oz.) pkg. wide egg noodles


    Season to taste


    1 can cream of mushroom soup


    1 1/2 c. milk


    1 (8 oz.) container sour cream


    1 1/2 c. grated Cheddar cheese


    1 1/2 c. grated Mozzarella cheese


    Cook and drain vegetables. Heat soup, milk, and sour cream. Blend until smooth. Cook and drain noodles. Mix all ingredients together with tuna and 3/4 cups each of Cheddar and Mozzarella cheese. Pour into 9 x 13 inch pan. Top with remaining cheese and bake in 350 degree oven for 20 to 25 minutes.

    Can Opener+Canned Tuna... bAm! healthy cat treat.
    Actually people food is really bad for your kitty. They don't have the same digestive track we do and can't handle that stuff. Additionally tuna is even worse. Fish, contrary to public opinion is not good for cats. Try chicken flavored wet food. If you are gonna have a party really splurge on kitty. Go out and buy the real chicken wet food for it and put it in a fancy dish. You might also throw some sprigs of nice green grass. Grass helps kitties digest better. Milk in small amounts can be good as well. Mix in some soft treats with the food and voila kitty gourmet meal spectacular!
    I like what the girl said about the sandwiches for the guests.....unfortunatly i will be out of town, so izzy %26amp; indie can not attend.....but you can give them a piece of the kitty cake when you some and check on them!! meow~!

    Cats are hunters right? You should put some fish in a bucket of water (or if there's an aquarium at your house that will work too) and let your cat go bobbing for fish.

    Pets are not supposed to have people food. It cuts 3 years off of their life. I suggest you buy your kittie some cat treats instead.
    Have a really huge dog jump out of the cake for your cat and his/her little cat freinds!!! The dog would love the tuna tasting cats = D
    Any sort of ceremony that people appreciate is completely lost on cats. I know from experience with my two furchildren. Just open the can, and put some on a plate for them. Don't let them eat the whole can, it'll make them urpy.

    i hate the stuff. usually won't touch it with a 10 foot pole. my dh, on the other hand, loves it. i saw paula deen make this a few years back, and out of pure love for my dh, i made them one night. needless to say, they are now a staple in our house. even i love them, and that says a lot!!! the fact that they're quick, cheap, and easy doesn't hurt either ;)





    Tuna Burger





    2 (6-ounce) cans solid white tuna, drained


    1/2 cup breadcrumbs


    2 large eggs, lightly beaten


    1/2 cup finely chopped onion


    1/2 cup finely chopped celery


    1 tablespoon chopped pimento, optional


    1 tablespoon fresh lemon juice


    1 1/2 teaspoons prepared horseradish


    1 clove garlic, minced


    1/4 teaspoon pepper


    1 tablespoon olive oil





    Preheat the oven to 350 degrees F.


    In a large bowl, combine the tuna, bread crumbs, and egg, and stir lightly. Add the onion, celery, pimento (if using), lemon juice, horseradish, garlic, and pepper, and mix again. Form the mixture into 4 patties. Heat the oil in a nonstick skillet over medium heat and cook the patties, covered, until golden brown. Carefully flip the patties and cook the other side for 5 minutes. Finish baking in the oven until golden brown.

    1 x 425g can tuna drained


    1 tablespoon bourbon whiskey, optional


    100 g butter chopped


    1 tablespoon finely grated lemon rind

    4 anchovy fillets


    sea salt and cracked black-pepper


    crusty bread to serve





    Place Tuna, whiskey, butter, lemon rind, chilli powder, anchovies, salt and pepper in bowl of a food processor and process for 2-3 minutes or until smooth.     Tuna Noodle Casserole


    My mom used to just boil noodles (any) drain and stir in a can of mushroom soup, add tuna, chopped onion, garlic, sliced green olives, (trust me, it works) salt and pepper to taste, top with shredded cheddar and bake @350 until cheese is hot and bubbly and lightly browned.

    1 package (12 ounces) egg noodles, cooked and drained


    2 packages (10 ounces each) frozen chopped spinach, cooked and drained


    2 cans (6 1/2 to 7 oz each) tuna, drained


    1 large jar (4 ounces) diced pimientos


    chopped onion


    2 cups grated sharp cheese, divided





    Combine cooked noodles, drained spinach, and remaining ingredients, reserving about 1/2 cup of the shredded cheese. Sprinkle reserved cheese over the top of the casserole. Cook in covered casserole in 350 oven until cheese is bubbly.

    Baked Tuna Croquettes with Dill Sauce


    Makes 4 Servings; 2 croquettes per serving





    2 tablespoons butter


    1 tablespoon all-purpose flour


    1/2 cup low-fat milk


    1 can ( 12 oz.) Tuna, drained and finely flaked


    1 cup grated zucchini or yellow squash


    2 tablespoons minced green onion


    1 tablespoon lemon juice


    1 teaspoon dried thyme, crushed


    1/4 teaspoon pepper


    1/2 cup cup buttermilk or low-fat milk


    1 egg


    1-1/2 cups crushed cornflakes


    1/3 cup grated Parmesan or Romano cheese





    Dill Sauce


    1 cup plain low-fat yogurt


    1/3 cup finely minced cucumber


    1/2 teaspoon dill weed





    Preheat oven to 350F. In a medium saucepan, melt butter; stir in flour. Add milk all at once. Cook and stir until mixture thickens and bubbles. Cook for 2 minutes more. Remove from heat. Stir in tuna, zucchini, onion, lemon juice, thyme and pepper until well combined. Cover and chill mixture for 30 minutes.





    Shape chilled mixture into eight 2-inch balls. In a shallow dish, stir together buttermilk and egg. In another shallow dish, combine cornflakes and cheese. Roll balls first in egg mixture, then in cornflake mixture. Repeat procedure to coat well. Spray a baking sheet with aerosol shortening; arrange croquettes on baking sheet. Bake, uncovered, about 30 minutes, or until heated through.





    For Dill Sauce, in a small bowl, stir together yogurt, cucumber and dill. Serve sauce with croquettes.

    1/4 cup cold water


    2 cans tuna drained.


    2 cups mayonnaise


    2 hard cooked eggs chopped


    1/2 cup chopped stuffed green olives


    2 tablespoons capers





    Directions


    Sprinkle gelatin onto cold water to soften.


    Place over low heat stirring constantly until dissolved.


    Combine all remaining ingredients with dissolved gelatin.

    Ingredients:


    2 (12 1/2 oz.) tuna (drained and flaked)


    1 and 1/2 cups of fresh bread crumbs


    1/2 cup mayonnaise

    1/4 cup bell pepper, chopped


    3 tablespoons fresh lemon juice


    2 eggs


    2 tablespoons of paprika





    Spanish Sauce Ingredients


    1 (14 1/2 oz.) stewed tomatoes


    3 tbsp. fresh lemon juice


    2 tsp. cornstarch


    1 tsp. Worcestershire sauce

    Directions:


    Spanish Sauce instructions Combine all the ingredients. Bring to a boil. Reduce heat and simmer for 5 minutes. (Makes 2 cups.)





    Tuna Loaf Instructions


    1. Mix all ingredients together. Bake in a shallow greased baking dish at 350 degrees Fahrenheit for 40 minutes.

    Ingredients:


    2 cans tuna drained or substitute with 1 can salmon


    4 baking potatoes, cleaned


    1/2 cup milk


    1/4 cup margarine


    1/2 cup Parmesan cheese, grated


    1/4 cup green onion, minced


    1 tsp thyme


    1 tsp dill


    1 tsp salt


    1 tsp pepper


    1/4 cup of frozen peas, thawed





    Directions:


    1. Bake potatoes. When cool, cut in half and scoop out centers. Mash potatoes and beat in cheese, onion and spices. Stir in tuna or salmon and peas.





    2. Spoon mixture back into hollowed out skins.





    3. Bake at 350 degrees Fahrenheit for 20 minutes.

    2 cans solid white tuna in water, drained and flaked (may use albacore tuna)


    1/2 cup of sliced ripe black olives

    1/2 cup of dairy sour cream


    1 teaspoon of ground cumin

    Directions:


    Combine tuna, olives, green onions and celery in a medium bowl. Combine Pace Picante sauce, sour cream and cumin; mix well. Pour picante sauce mixture over tuna mixture; toss lightly. To serve, line taco shells with lettuce leaves; spoon tuna mixture into shells. Another option is to line individual serving plates with shredded lettuce; top with tuna mixture and surround with tortilla chips. Drizzle with additional Pace Picante Sauce; top with additional sour cream, if desired.

    Ingredients:


    Dressing


    3 tablespoons red wine vinegar


    1 large clove garlic, minced


    1 teaspoon, dried basil


    1/2 teaspoon salt


    1/4 teaspoon sugar


    Freshly ground pepper to taste


    4 teaspoons olive oil





    Pasta Salad


    2 cups bow tie or spiral pasta; cooked, drained


    1/2 cup water-packed tuna; drained, flaked


    2 ounces cheddar cheese diced in 1/4 inch Cubes


    1 cup halved cherry tomatoes


    1/4 cup thinly sliced red onion


    1/4 cup thinly sliced celery


    3/4 cup steamed broccoli flowerettes


    1/2 cup sliced, canned or thawed Frozen artichoke hearts


    1/4 cup chopped parsley





    Directions:


    1. To make dressing place ingredients in small container with tightly fitting lid.





    2. Cover tightly and shake thoroughly to mix.





    3. To make salad In large bowl combine salad ingredients.





    4. Pour dressing over all and toss to mix. 5. Chill at least 1 hour.

    Grilled Tuna, Cheddar, and Onion Sandwiches


    Ingredients:


    1 large onion, thinly sliced


    1 garlic clove, minced and pressed


    1/2 cup chicken broth


    2 cans of albacore tuna, water-packed, drained


    1/2 cup celery, minced


    2 Tbsp mayonnaise


    8 dark rye bread slices


    1/4 lb sharp cheddar cheese, thinly sliced





    Directions:


    1. In a 10-12'; nonstick frying pan, combine onion, garlic, and half the broth. Bring to a boil over high heat; stir often until liquid evaporates and browned bits stick in pan.





    2. Add half the remaining broth; stir to scrape browned bits free, and then boil again until liquid evaporates and browned bits form. Repeat step with remaining broth, cooking until liquid evaporates. Set onion mixture aside.





    3. In a bowl, mix together tuna, celery, and mayonnaise. Top 4 slices of bread equally with tuna mixture, onion mixture, cheese, and remaining bread.





    4. Wipe the pan clean. Place over medium heat and add 2 sandwiches. (Another option is to use another nonstick frying pan and toast all the sandwiches at the same time.) Cook until sandwiches are toasted on the bottom, for about 4 minutes. Turn over and toast tops, for about another 4 minutes.


    Yield 4 Servings

    * 2 cans white tuna, drained, (12 to 14 ounces total)


    * juice of 1 lime


    * 1 can (2 1/4 ounces) sliced ripe olives, drained


    * 1 can (14 ounces) artichoke hearts, drained and quartered


    * 2 cups cooked long-grain rice, chilled


    * 1/2 cup mayonnaise


    * 2 teaspoons dried dill weed





    Preparation:


    In a mixing bowl, break up tuna with a fork. Sprinkle lime juice over the tuna; mix well. Fold in the sliced olives, quartered artichoke hearts, and rice. Add mayonnaise and stir in dill weed.

    * 2 cups biscuit mix (Bisquick, Pioneer, etc.)


    * 2/3 cup milk


    * 1 can (6 1/2 to 7 ounces) tuna, drained and flaked


    * 1 cup finely chopped celery


    * 1/4 cups chopped stuffed green olives


    * 1/4 cup mayonnaise


    * 2 tablespoons sour cream


    * 1 can (10 3/4 ounces) condensed cream of mushroom soup


    * 1/3 cup milk


    * 1 tablespoon finely chopped green onion tops





    Preparation:


    Combine biscuit mix and 2/3 cup milk; mix, following directions on the biscuit mix label. On a floured surface, pat or roll out dough to an 8x10-inch rectangle.





    Combine tuna, celery, olives, mayonnaise, and sour cream; spread evenly over the dough. Beginning at one end, roll up jelly-roll fashion. Pinch edges to seal.





    Slice crosswise into 8 even-sized rounds. Place rounds on a greased baking sheet. Bake at 400掳 for 15 minutes, until golden brown.





    Make mushroom sauce. In a saucepan, combine cream of mushroom soup and milk; heat over medium heat until bubbly. Add chopped chives or green onion tops. Serve with tuna roly poly.

    Ingredients:





    * 1 cup water


    * 1/2 cup butter


    * 1 cup enriched Hour


    * 1/8 teaspoon salt


    * 4 eggs





    Preparation:


    Bring water and butter to boil; stir until butter melts. Add flour and salt all at once; reduce heat and continue to cook, stirring constantly, until mixture is smooth and forms a soft ball, one to two minutes.





    Remove from heat and let cool slightly. Add eggs one at a time, beating well after each addition. Drop batter by tablespoons onto a greased baking sheet to form an 8-inch circle. Leave about 1 inch between each puff portion. Bake at 400掳 for about 30 minutes, until puffed and lightly browned.





    Tuna Filling





    * 2 tablespoons butter


    * 1 cup chopped apple


    * 1/4 cup chopped onion


    * 1 teaspoon hot curry powder


    * 2 cans tuna, drained


    * 1 can (10.5 ounce) condensed cream of chicken soup, undiluted


    * 1/2 cup raisins


    * 1 teaspoon salt


    * 1/2 teaspoon pepper


    * 1 package (10 oz) frozen chopped spinach (about 1 1/2 2 cups frozen)


    * 1/4 cup slivered almonds, toasted, optional





    Melt butter in saucepan; add apples, onions and curry powder; saute until tender. Add tuna, soup, raisins, salt and pepper; continue to cook over medium heat until thoroughly heated, stirring frequently.





    Cook spinach according to package directions; drain. Spoon tuna mixture into cream puff ring and spoon cooked spinach on top of tuna mixture. Sprinkle with almonds.





    Toast almonds in a dry skillet over medium heat, stirring, until golden brown. To oven toast, spread out in a single layer on a baking sheet. Toast in a 350掳 oven, stirring occasionally, for 10 to 15 minutes.

    * 4 green bell peppers, split, seeds and membrane removed


    * 1 tablespoon finely chopped onion


    * 1 cup soft bread crumbs, divided


    * 1 egg, slightly beaten


    * 1/2 cup milk


    * salt and pepper to taste


    * 1 teaspoon fresh lemon juice


    * 1 can (7 1/2 ounces) tuna, flaked


    * 2 tablespoons butter or margarine





    Preparation:


    Boil peppers in boiling salted water for 5 minutes; drain well. Combine onion, 1/2 cup bread crumbs, egg, milk, salt and pepper, lemon juice, and tuna. Fill pepper shells. Mix melted butter with remaining 1/2 cup bread crumbs; sprinkle over stuffed peppers. Place in a shallow baking dish at 400掳 for 15 minutes.
