Tuna Casserole

(This one is hearty, heart-warming, easy, quick, and inexpensive. You can substitute crab, lobster, salmon, chicken or turkey for the tuna with equal results)

INGREDIENTS:

1 Tbsp butter or olive oil

1/2 cup diced onion

1/2 cup diced celery

1 can cream of mushroom soup

1/2 cup water or milk

8 ounced frozen peas

1 (6-ounce) can tuna packed in water or oil, undrained

1 cup buttered bread crumbs or crushed plain potato chips

8 ounces packaged wide noodles, cooked

PREPARATION:

Preheat oven to 400 degrees F. Spray a glass casserole dish with vegetable oil or lightly grease.

In a large saucepan, saute onion and celery in the butter or olive oil until vegetables are barely soft, but not mushy.

Add mushroom soup, water, and peas. Bring to a simmer, stirring to dissolve soup. When it begins to boil, turn off heat and gently fold in tuna with liquid.

Add cooked pasta noodles and toss to coat with sauce. Pour into prepared casserole and top with bread crumbs or potato chips. Bake 30 to 40 minutes until heated through and topping is lightly browned.

Yield: 4 to 6 servings

Variations:

you don't have celery, use all onion, and vice versa. Broccoli can be substituted for the peas. Chicken can be used instead of water or milk. Any canned or cooked seafood can be substituted for the tuna, and it also works with leftover or canned poultry. Some folks like to add cheese to the sauce or as a topping. Low-fat, low-calorie, and/or low-salt products may be used with equal success. Feel free to modify to suit your own tastes.
Prepare a mixed green salad (whatever greens you have: lettuce, celery, cabbage, cucumbers, tomatoes). Chop them up in small pieces. Drain the oil off the tuna can. Break the tuna into small pieces and mix into the greens. Add a little salt, dress with virgin olive oil and some lemon juice. You have a cheap and healthy tuna salad.
Simple Tuna Salad:

3 min 3 min prep

1 servings

1 (6 ounce) can of your favorite tuna

2 teaspoons mayonnaise

2-3 teaspoons sweet pickle relish

1. Drain the water from the tuna can.

2. Mix in the Mayo and Relish.

3. Eat it alone or put it on toast.

4. Its that simple.
cook some noodles add tuna and cream of mushroom soup. Then you add pepper to taste or add some dill to enhance the flavor of the tuna . You can also add a little cheese if you like. I like asiago but Parmesan or romano works well also.
Boil some elbow macaroni in a pot and when it is done, mix it up with tuna, celery, onion, sweet relish and Marzetti salad dressing. Tasty!
tuna salad...add a little mayo and mix it up, salt and pepper to taste thow it on some toast, and you got a pretty good sandwhich

if you have any veggies, you can add green peppers onions and or celery to it when mixing
I know this may sound gross but I used to be a beoke college student too...

I would take a can of tuna and put it on a hot pan then add ketchup and a little all purpose seasons (or salt %26amp; pepper will do)

Then I would eat it with crazkers or rice... whater I had.

Its very yummy and...

I also at it with raisins, apples and lettuce on sandwhich bread! yumm yumms
Do you have a box of macaroni and cheese? You can throw a can of tuna in it and add in cheddar cheese and/or peas and/or crushed up crackers and/or mayo ... just experiment and make a casserole.

If you have a package of alfredo noodles (lipton) or something similar, you can add tuna to that and crush up potato chips on top for a dish that tastes super ... although with crushed chips on top it's not too healthy.
