Do a Tuna and Veggie Fried Rice. What are some recipes with tuna ?
I like to make a mock version of ceviche to toss with penne or bowtie pasta %26amp; it is really good:

1 (6 ounce) can solid white tuna packed in water

1 fresh jalapeno chile, seeded and minced (more or less to taste or substitute green bell pepper)

1 small red onion, peeled and finely chopped (omit if you don't like onion)

1 ripe tomato, diced

1 tablespoon chopped fresh cilantro (or the kind in the tube is good, but cilantro is a key ingredient IMO)

Salt to taste

Freshly ground black pepper to taste

1/4 cup fresh lime juice (1-2 limes)

2-3 tablespoons extra virgin olive oil

Just mix above ingredients %26amp; toss with pasta. Yum!

TUNA %26amp; VEGETABLE CANNELLONI

green beans

tomatoes

2 small cans tuna fish in oil

12 dry cannelloni

tomato sauce

mayonnaise

Prepare home made tomato sauce with olive oil, onion and canned crushed tomato.

Boil the cannelloni in salty water. Boil in vapor the green beans.

In a bowl place the the beans, add the finely cut tomatoes and mix in Modena vinegar and extra virgin olive oil, add the oregano, salt and pepper, 1 finely cut boiled egg, and the 2 tuna fish cans. Add the mayonnaise and mix everything together.

Place the 12 boiled cannelloni on a board and cover them with the mix.

Roll them and place them on a oven-resistant metallic container. Cover the cannelloni with the tomato sauce and put the on the pre-heated oven, maximum temperature for 10 minutes. Serve.

Makes 4 servings.

sounds good to me. you have great ingredients to make a great and simple meal. don't know what veggies you have on hand, but use what you have and add some chopped/minced garlic, butter, chop and drop some veggies. do you have any capers on hand? i love capers. salty. what about pimentos? green olives?? mix and blend gently together.

girl, you have your meal already put together basically. sounds good and i am starving. good luck on your meal.
TUNA PASTA:

saute minced garlic and onion in an olive oil. Throw in some fresh diced tomatoes and add tuna flakes. If u have dried basil or italian seasoning sprinkle some and season with salt and pepper.

to give it a kick...u can use red pepper flakes if u have some.

Toss this with your cooked pasta.

enjoy

This recipe sounds really good and should be wonderful with fresh pasta.
