Charlie’s™ Tuna Melt Wraps

Ingredients:

(4) Mission® Low Carb Soft Taco Size Flour Tortillas

1 (7 oz.) pouch or 2 (3 oz.) pouches of StarKist Flavor Fresh Pouch® Tuna (Chunk Light or Albacore)

1/2 cup diced celery

2 Tbsp. of sweet green pickle relish

1/2 cup or 4 oz. of light mayonnaise

1 tsp. of lemon juice

1 cup of sharp Cheddar cheese (shredded)

Directions:

If broiling, pre-heat oven on broil to 350°F. In a bowl, combine the tuna, celery, pickle relish, light mayonnaise and lemon juice, mixing well to create the “tuna melt” mix. Down the center of each tortilla, place an equal portion of the tuna mix and top each with 1/4 cup of Cheddar cheese. Place each prepared tortilla on a broiler pan and place under the broiler (for microwaves, use a microwave-safe plate) and cook until the cheese begins to bubble (approximately 11/2 -2 minutes). Once each tuna melt is cooked, fold the long end of the tortilla over ingredients and roll tightly and transfer them to individual plates.

Prep Time: 10-15 minutes

Prep Tool: Microwave or Oven Broiler

Serves: 4

1 can (9 to 10 ounces) tuna, drained

3 hard-cooked eggs

1 tablespoon chopped chives, frozen or fresh

3 tablespoons sweet pickle relish

1/3 cup mayonnaise

1/4 teaspoon salt

1/8 teaspoon pepper

8 hot dog rolls, partially split, or hamburger rolls

thinly sliced sweet pickle

Combine tuna, chopped eggs, chives, relish, mayonnaise, salt, and pepper; mix well. Stuff the partially split hamburger rolls and stand on a plate, filled side up. Cover and refrigerate until serving time. Serve garnished with pickle slices and serve with chips.

Makes 8 sandwiches.
I like to eat tuna with mayo on crackers and with tomato soup.

I also like tuna with mayo and Franks Red Hot on toasted bread. I like it with some romaine lettuce, but that is a vegetable.

I also like to have it with a little dijon mustard on lettuce cups, oops, veggie again --- on bread, I mean.

Some people like a boiled and chilled hard boiled egg added to tuna, with some sweet relish or diced pickles (i know that is a veggie too, but it is good that way...)

Try adding 1 T olive oil and 2T White Balsamic Vinegar and eat on crackers.

Or, try squeezing some lemon on it.

(She said no veggies, people...at least I tried...)
In a medium bowl, stir tuna, mayonnaise, Parmesan cheese. Season with parsley, dill and garlic powder and salt and pepper if you want . Mix well and serve with crackers or on a sandwich.

YUM!
